• 1 Large Heirloom Tomato
  • 1lb Tomatillo (approx. 8 medium size)
  • 6 Jalapeno Peppers
  • 4 Cloves of Garlic
  • Generous handful of Cilantro
  • 1 Large Red Onion
  • Salt to taste


  • Peel husk from tomatillos and wash. They are sticky, you want to clean them thoroughly. Peel and cut onion in half. Wash jalapenos but leave them whole. Smash 4 cloves of garlic. Set the heirloom tomato and cilantro aside for now.
  • Place jalapenos, tomatillos, onion halves, and garlic on a baking sheet. Roast at 400 degrees for approx. 20 minutes, turning halfway through.
  • After roasting, cut and remove jalapeno seeds. Using a food processor combine all roasting ingredients and cilantro until your desired consistency is achieved.
  • Once done, dice your heirloom tomato and mix it into your finished salsa.


  • Rough chop peppers and onion before adding to processor
  • Hand dice half of the roasted onion to maintain some bigger pieces. Add in at the end for a chunkier salsa.
  • Tomatillos can be placed in whole
  • Add Cilantro at the end and don’t forget to salt to taste!
